Coconut testa (the outer brown coat of copra or the wet coconut kernel) is removed by a process known as paring or peeling, which forms 18% of the coconut. Hence dry testa and wet testa are obtained as by-products of coconut processing. The wet testa must be dried to get a stable product, which after expelling yields oil and residual cake. Both wet and dry testa contain 50-60% oil, and its cake contains health-promoting compounds. Wet coconut testa oil and defatted wet testa extract have more tocopherols, tocotrienols, phenolics, phenolic acids, and flavonoids. unsaturated fatty acid composition and glyceride makeup, iodine value, and yellow to brown colour.
